The Dubliner Cheese is one of my favorite cheeses. I like it plain or on a rice cracker with jalapeno jelly. It is a hard cheese that tastes a bit like cheddar and parmesan. My mother made the mistake of using a knife to slice this cheese and of course, her knife broke.
Ripening the Dubliner Cheese can take up to two years, and with the bacterial culture added during manufacturing, calcium crystals may develop. They can add a gritty texture but it goes to enhance the flavor. Taste and texture may vary in the pre-packs since a cheese’s flavor may change as it matures and there can be differences between batches.
